Radish Butter

A great, easy and refreshingly delicious recipe for those early spring radishes.It’s perfect simply on a slice of french baguette or use it on your sandwiches in place of regular butter.


15 French breakfast radishes

6 Radish leaves

3 Tablespoons of softened unsalted butter

1/2 Teaspoon of Fleur de Sel

A squeeze of lemon juice


Trim the radishes and place them in the small bowl of a food processor. Add the leaves. Process until finely chopped. Add the butter and process until well blended. Add the salt and lemon juice and process again. The finished product should be chunky. Cover and refrigerate for several hours before serving.
